1 Scatchet Head Newsletter A BIG Thank You to our Pool Attendants who helped finish out the pool season for us. Pool Attendants: June Bright, Jimmy Doolittle, Tonya Graff and Hunter Parrick. A Special Thanks to Jerry, our Facilities Superintendent for his expertise, pride in his work and extra efforts in making our facility a beautiful place for us to live. Parking at SHCC Facilities and Driftwood Drive Make sure your guests have parking passes while using the Scatchet Head Community Club Facilities and all of Driftwood Drive. All vehicles must display SHCC decal or guest pass in the front car dash. Parking of vehicles shall be orderly and as not to impede other parked vehicles for ingress or egress. No parking on grass area. Overflow parking is allowed on the North side of Driftwood Drive. No overnight parking of vehicles is allowed except on private property. All vehicles left for 24 hours will be towed at the owner s expense. The speed limit for Driftwood Drive and parking areas is 15 MPH. 2 Community Information Announcements A Special Board Meeting will be held on Saturday, September 19th at 10:00 AM to elect New Board Members. The Committee Meeting will follow after the Board Meeting. October Board Meetings The next Board Meeting will be held on Saturday, October 3rd at 10:00 AM to 12:00 PM. 5 Community Information Recipes from Chef Dan For more recipes, check out Chef Dan s blog at: soupson4-40.blogspot.com SPICY CROCK POT THAI BEEF by CHEF DAN: Serves 6-8 INGREDIENTS: 2 tablespoons coconut oil, divided 2 pounds round steak, cut into strips 1 onion, thinly sliced 3 garlic cloves, minced 1 thumb-size fresh ginger, minced 1 (19 Oz) can Mae Ploy coconut milk 1/3-cup tomato paste 2 tablespoon red curry paste 1 tablespoon EACH fish sauce, oyster sauce, tamarind, curry powder, sumac, and smoked paprika 2 teaspoons EACH sea salt, and lime juice 2 cups EACH broccoli florets, and julienned carrots 1 cup jicama, julienned A bunch fresh cilantro DIRECTIONS: 1. Heat 1 tablespoon coconut oil in a skillet over medium-high heat when sizzling. 2. Add the strips of meat and brown on all sides. 3. Spray crock-pot with cooking spray and add browned meat. 4. Wipe out the skillet and add remaining oil, over medium-high heat. 5. Add onions, and ginger and sauté for 4 minutes. 6. Add garlic and sauté 1 minute. 7. Add coconut milk and stir continuously to release browned bits in the bottom of the pan. 8. Add tomatoes paste, and next 8 ingredients. 9. Add to the crock-pot over the meat. 10. Cook on high for 5 hours or low for 8 hours. 11. Add broccoli, carrots and jicama during the last 30 minutes for high heat and 1 hour for low heat of cooking. 12. Serve with cilantro. BON-APPETITE!! 6 Community Information Recipes from Chef Dan SEAFOOD SOFT TOFU STEW HAEMUL SOONDUBU JjIGAE by CHEF DAN: Serves 3 INGREDIENTS FOR YANGNYUM (seasoning or spice) Yields 3 tablespoons 3 teaspoon chili powder 1 tablespoon soy sauce 1 garlic clove, minced 1/2-teaspoon brown sugar 1 teaspoon oyster sauce 1 teaspoon sumac 1/4-teaspoon sea salt 1 tablespoon mirin or sake Pinch of black pepper For more recipes, check out Chef Dan s blog at: soupson4-40.blogspot.com INGREDIENTS: 9 clams 9 Penn Cove mussels 9 shrimp 1 bunch of green onions 1(12.3 Oz) silken tofu 4 teaspoons sesame oil 1/2-cup water 1 egg DIRECTIONS: 1. Mix all the Yangnyum ingredients together, enough for 3-4 batches of soondubu Jjige. 2. Heat pot with 3 teaspoons sesame oil over high heat when sizzling. 3. Add 2 tablespoons Yangnyum, and garlic, fry until resembles a paste. 4. Add 1/2-cup water. 5. Add the clams, mussels, and, shrimp. 6. Wait until the waiter starts boiling. 7. Then add the soft tofu. 8. Taste and season if necessary. 9. Let boil 5 minutes. 10. Add a pinch of pepper; crack an egg and 1 teaspoon sesame oil. Page 6
7 Community Information Announcements Are you interested in CERT Classes? November 2015 Classes are as followed: November 6, 2015 at 6:00 PM to 10:00 PM November 7, 2015 at 8:00 AM to 5:00 PM November 8, 2015 at 8:00 AM to 4:00 PM The Community Emergency Response Team (CERT) program helps train people to be better prepared to respond to emergency situations in their communities. When emergencies happen, CERT members can give critical support to first responders, provide immediate assistance to victims, and organize spontaneous volunteers at a disaster site. CERT members can also help with non-emergency projects that help improve the safety of the community. The CERT course is taught by South Whidbey Fire Station 31, 5535 Cameron Rd, Freeland WA. There is ONLY 10 spaces left for course session. CERT training includes disaster preparedness, disaster fire suppression, basic disaster medical operations, and light search and rescue operations and among others. If enough people are interested, the class can be offered at Scatchet Head to help us build our own emergency response team. We need 20 people to sign up in order to hold a class at Scatchet Head Community Club in the future. Contact: H.L. Rusty Palmer, Fire Chief at (360) or at chief@swfe.org or/and Jordan Boyer at (360) or at jr.boyer@yahoo.com Just Some Friendly Reminders Clubhouse and Community Property hours are from 9 AM to 9 PM. (Key cards are on timers 7 days a week to reflect these hours) Clubhouse Reservations: You can reserve either the Clubhouse or the BBQ area, not both. Be sure and plan to pick up the kitchen key ahead of time if you need it. Make sure your guests have parking passes while using the Facilities and Driftwood Drive. Leave the facility as you found it and you will not lose your cleaning/damage deposit. A check list is included with your reservation form. As a member, you are responsible for any damage your guest may do. Maximum number of hours for any reservation is 4 hours. This includes time to clean up. If a party does not conclude with the pre-designated time, Scatchet Head can withhold refunding the deposit. Reservations can not be taken for Memorial Day Weekend, Fourth of July Weekend, nor Labor Day Weekend. Page 7
8 Committees Arch & Plats Purpose: To discuss any new building construction applications in Scatchet Head and any complaints received about violations of the SHCC covenants. Topics discussed at last meeting: Discussed: 60 day notices were sent out to 6 Covenant Violations. 3 out of 6 Property Owners responded to the office with their game plan. 1 has been cleared. Next Meeting s Agenda: Update on the 6 Covenant Violations. Delivery receipts are not returned after 30 days. Chair: TBD/Co-Chair: TBD Facilities Purpose: To help maintain and improve our facilities which keeps our property values strong and our assessments at lower rates. Topics discussed at last meeting: Discussed: AED defibrillator for the Clubhouse. Discussed Rain Barrels in front of the pool area. Next Meeting s Agenda: Preparation for Spring Planting. Discussion on another Rain Barrel in front of Clubhouse. Pool Operations for longer season.
