Remember the more you put into something in life the more you get out of it. We all have projects we're working on at present, and no one wants to take on additional responsibilities. We're thinking that maybe come Spring, such pressures may be reduced, and we may come together again. All of us enjoy the sessions so much we don't want the group to just disappear. Certainly we'll all be involved (or most of us) when it's time to get ready for the Highland Games. Someone is bound to be able to assist. Who knows, your thoughts/ideas or questions might appear in the Newsletter! 3 Photo Opportunity Any members with cameras interested in taking pictures at our events. We do need some photographic proof of our activities. Maybe we could have a photo contest based on the best submission from each event (to be voted on by those attending the event) Submit your favourite Recipe; to jars@mars.ark.com SCALLOPED POTATOES submitted by Rhoda Ross 2 tablespoons of snipped parsley 1 1/2 cups thinly sliced onions 4 1/2 cups thinly sliced pared white potatoes 3 teaspoons salt 7 teaspoons flour 1/8 teaspoon pepper 1/8 teaspoon paprika 1 3/4 cups milk Start heating oven to 400 degrees F. Bring 1 water to boil in covered saucepan. Grease 1 1/2 QT casserole, prepare parsley, onions, potatoes. To boiling water, add onions, potatoes, 2 teaspoons salt, boil, cover 5 min., drain. Meanwhile in double boiler or skillet, over very low heat, melt butter, stir in flour, 1 teaspoon Salt, pepper, paprika, then milk, cook, stirring constantly, until smooth and thickened. In casserole, arrange one third of potatoes and onions, sprinkle with half of parsley, pour on one third of sauce, repeat with another third of potatoes and onions, rest of parsley, and half the remaining sauce. Now add rest of potatoes and sauce. Bake, uncovered, 35 min., or until tender and brown. 5 The Club Newsletter History -- Jan to Based on the information from the club newsletter file of Bill Georgeson, ---- the 1st issue of the club newsletter started back in January 1997 called the ---- Comox Valley Celtic Club News arranged by Hugh & Vi McKinnon of which there were 14 issues ---- September 1998 it became -- The Celtic Reporter -- arranged by Warren Marsh, 3 volumes V1 1-6, V2 1-7, with issue 3 repeated twice,v3 1-5 Dec issues In April 2002 is was just called the Comox Valley Celtic Club Newsletter on the the present, -- 4 issues to late Fall In 2004 Jim Walker was editor and Glenda Gentleman took it over that fall to the Summer of issues Bill s Celtic Club newsletter collection starts in Jan ends in Dec There are 36 issues. The Nov 07 newsletter is issue # 48 To all previous Newsletter editors, sincere thanks for your participation. GEORGESON RECEIVES ROTARY RECOGNITION; This year the Rotary Club of Comox acknowledged Bill Georgeson as the recipient of the Paul Harris Fellowship award as a community volunteer. Georgeson was born in Scotland and served with the British Royal Navy and he received a commemorative medal for manning the convoys, says Darilyn Turnbull of the Rotary Club of Comox. Several years after the war, Georgeson decided to move to Canada. He and his wife Joy moved to the Comox Valley in 1993 and became active in the community, says the club. He has volunteered countless hours serving for many community groups, In 2003 he was made an honourary citizen of Comox, and at age 83 he is active with many community groups. 6 A small group but the entertainment offered by our own members was excellent, and the food (quite a variety) was excellent. It went well but was sadly lacking in numbers. Joan did a super job of decorations etc. and the food brought by members was fantastic, so, it was a pity that more members didn't show up.
