1 From Your President JUNE, 2016 You will have noticed since the last meeting that the number of club activities is increasing since the return to the North of so many of our members. At the May meeting, we had a full house. At the end of May, fiftyfour of our members enjoyed an outstanding tour of the Niagara wine region so capably organized by Bernie and Ken Smith. In true Smith tradition, even the weather was wonderful. As you will see elsewhere in this newsletter, several additional activities are being offered, so I would encourage you to bring your cheque book to sign up on June 20th. Many of these opportunities will fill up quickly, so don t miss out. When you sign up for an activity, I would remind you that the date on the cheque must be the same as the date the cheque is issued. Post dated cheques cannot be accepted. Your cheque is your commitment to attend, and it allows the event organizers to make financial commitments on our behalf. In order to alleviate some of the congestion at the sign-up tables, you will now be able to sign up for activities before, and directly after the meeting, as well as during the break. Be prepared with your cheque filled out before you get to the sign-up table. All the information required to register for events can be found in the Newsletter. The main item of business at the June meeting will be a notice of motion to amend the Club By-laws. A copy of those By-laws, with the proposed amendments, is included in this newsletter. Many of these amendments are proposed to provide greater clarity, but a few are designed to improve existing practices. By-law 2 (Membership), item 4 proposes to increase the annual membership fee. This represents the first increase in six years. At the June meeting, the Treasurer will present the financial case for the increase being proposed. The members of the Management Committee, having carefully examined all the facts, are overwhelming convinced that such an increase is both necessary and responsible, to ensure that our Club s affairs over the next five years are based upon a sound financial foundation. Please read all the By-law amendments being proposed. At the July meeting, a motion will be brought forward to adopt the new By-laws as circulated. If you wish to move an amendment to these proposals, you should forward your amendment, in writing, to the Secretary, (Joan Tempest), or to the President, to have the amendment considered at the July 18 meeting. I am looking forward to seeing you all at the Best Western on June 20th. David Wells

Coffee and Tea Bigwin Inn opened in 1920, an exclusive summer destination for tourists from Toronto and the eastern US. Developed by C.O.Shaw, of Huntsville. He founded the Bigwin Inn Company Ltd. in 1915 and hired architect John Wilson of Collingwood to design the resort. With 350 guest rooms, it was one of the biggest and most beautiful resorts in Muskoka. Wilson employed classical, Mediterranean, dodecagon, craftsman, Tudor and Victorian design elements, placed the buildings using the natural shoreline and landscape, and connected the buildings with covered, lit walkways. Key buildings were the Indian Head Dining Room, seating up to 750 guests at a time, the Dance Pavilion and the Rotunda. At its height during the 1930s many renowned musicians played at the Dance Pavilion. By then, the smaller Marine Dining Room and the less elaborate Tea House were built. From 1941 to 1945 the Dutch Royal Family summered on the island when they were exiled in Ottawa. Beatrix of the Netherlands and her family lived in private cottages. The Rotunda was used to store the constitution of the Netherlands. Later construction was carried out by prisoners of war from the Gravenhurst Prisoner of War Camp.

The Cookie..and other sweets...people Thanks to Maureen Bithell, Lorraine Kindy, Ed and Marilyn Richter and Bernie Smith for cookies last month. A muffin is an individual-sized, baked quick bread product. Muffins in North America are similar to cupcakes in size and cooking methods. Muffins are available in both savory varieties, such as cornmeal and cheese muffins, or sweet varieties such as blueberry, chocolate chip or banana flavours. Muffins are often eaten as a breakfast food. Main ingredients: flour, leavening, vegetable oil, sugar Outside the United Kingdom, an English Muffin is a flatter disk-shaped, typically unsweetened bread of English origin. These muffins are popular in Commonwealth countries and the United States. North American Muffins Recipes for quick bread muffins are common in 19th-century American cookbooks.recipes for yeast-based muffins, which were sometimes called common muffins or wheat muffins in 19th-century American cookbooks, can be found in much older cookbooks. In her Boston Cooking- School Cook Book, Fannie Farmer gave recipes for both types of muffins, both those that used yeast to raise the dough and those that used a quick bread method, using muffin rings to shape the English muffins. Farmer indicated that stove top baking, as is done with yeast dough, was a useful method when baking in an oven was not practical. September 23 October 7 October 21 November 4 November 18 December 2 December 16 The English muffin is a type of yeast-leavened bread; generally about 4 in (10 cm) round and 1.5 in (3.8 cm) tall. Rather than being oven-baked, they are cooked in a griddle on the stove top and flipped from side-toside, which results in their typical flattened shape rather than the rounded top seen in baked rolls or cake-type muffins. The type of English muffin sold today was popularised in the late 1800s by English-American baker Samuel Beth Thomas (whose baked-goods company Thomas survives to this day). Etymology The name is first found in print in 1703, spelled moofin; it is of uncertain origin but possibly derived from the Low German Muffen, the plural of Muffe meaning a small cake, or possibly with some connection to the Old French moufflet meaning soft as said of bread.
