It was a phenomenal night of hospitality, cuisine and education. As always a job well done and Kudos to everyone. The educational demo on molecular gastronomy, presented by Chef Cher Harris was clearly informative and I hope that everyone learned some new tricks of the trade and will be inspired to to experiment with some of the techniques and products in their own operations Elections With the months quickly passing we are approaching the nominations and election of officers for the 2013 term. Nominations will be accepted for the ballot at the November meeting. If you are a professional member in good standing I encourage you to consider the opportunity to run for office and take an active role in the leadership, direction and future of your chapter. If you feel that you would like to contribute your time and talent to serve, please feel free to contact myself or any of the current officers with questions. 2 THE V.P. CORNER September National Apple Month and Cholesterol awareness SEASONAL PRODUCT SPOTLIGHT Greetings Fellow Culinarians, W ow!!! What an awesome presentation provided by Chef Harris C.E.P.C and Sous Chef Aaron teaching the ACF chapter the basics of molecular gastronomy. The hand out on the common types of hydrocolloids was quite informative. Chef Ken Gladysz C.E.C and his team had orchestrated a symphony of well thought out and well prepared food for the evening. Thank you student chefs for your time, energy and passion put into the dinner! Cholesterol provides a protective fatty jacket around nerve fibers, produces vitamin D on the skin when exposed to sunlight, and is an important building block for certain hormones. There are two ways cholesterol can be measured: in our blood (serum cholesterol) and in our foods (dietary cholesterol). Dietary cholesterol is found only in animal foods "Culinary Fundamentals pg 35 and 36 The picture on the left is the structure of cholesterol. The honey crisp apple is one of my favorite apples! The flavor reminds me of a Green Jolly Rancher hard candy. If you have not tried a honey crisp apple please, go to the grocery store and buy one! The apple will be a pleasant surprise, plus you can help lower your cholesterol levels with the soluble and insoluble fiber derived from the apples. The honey crisp apple is a hybrid apple. It is a Macoun and a Honeygold cross breed. Created at the university of Minnesota. The apple is currently produced in Minnesota, Wisconsin, Michigan, Illinois, Idaho, PA and there may be other smaller producer through out. (Honeycrisp.org) The Peters Orchards in Gardners PA is a phenomenal place to taste a wide variety of apples. Thank you Honey Crisp apple is harvested Sept to Oct. 3 MEETING INFORMATION Monthly Meeting Minutes From August 20th 2012: The meeting was called to order by President Michael Finch CEC,ACE at 7:15PM. The meeting was held at the Hotel Hershey. We had the Pledge of Allegiance and Prayer. The following officers were present: President Michael Finch CEC,ACE, Vice President Spencer Mundy, Treasurer John Reis and Chairman of the Board Brian D. Peffley CEPC, CCE,AAC. The following officers were absent: Secretary Marsha Brandt The President introduced our guests for the evening. The chapter had dinner at 7:15 PM with the General Meeting starting around 7:30 PM. Approval of the Minutes: Treasurers Report: The following was provided by John Reis. Correspondence The chapter received a Thank You Letter from the Ronald McDonald House as well as their Monthly Newsletter. The chapter also received Thank You Letters from the students at LCCTC for the Chapters donation for their trip to Skills USA National Competition in Kansas City Education Chairperson: Ed Byrem Co-Chair: Michael Finch Just a reminder to make sure to sign in at meetings to get credit for Continuing Education Hours. Membership Chairperson: Richard Blythe Co-Chair: Chick Zoll You may complete the entire membership application under membership. Please remember to renew your membership. Barb Byrem is mailing correspondences of past due, due, and new members letters of reminder and welcome. Please continue to update information with Nationals. Newsletter Chairperson: Marsha Brandt Co-Chair: Michael Finch There was a request to include directions in the newsletter for the monthly locations. There was also a request to include first and last name of the members making a motion and/or second. Golf Outing Chairperson: Brian Peffley Co-Chair: Spencer Mundy The event is scheduled for October 15, They are looking at running 3 courses this year to get more golfers. Student Membership Academy of Chefs Chairperson: Bob Roebuck Co-Chair: Tom Long AAC At the National Convention the 41st Annual Induction Reception and Dinner is Sunday July 15, 2012 at the Waldorf Astoria Orlando. Ronald McDonald House Chairperson: Bob Roebuck Co-chair: Tim Durgey Taste Chairperson: John Reis Co-Chairs: Roebuck, Finch, Gipe, & Durgey The event is scheduled for October 28,2012 at Strawberry Square. This is the 25th Year Anniversary. Meeting is scheduled for August. Blood Bank Chairperson: Mike Harants Co-Chair: Tim McGrath Chapter Goal is 16 pints. Please donate to ACF PA 181. LCCTC had a Blood Drive. Goal has been reached! Chefs Move to Schools Chairperson: Dave Gurdus Brain Peffley presented pins to the chefs that were present at the meeting for participating in the Chefs Move to Schools program. 5 ACF NEWS BRIEFS Old ACF and New ACF Business PA Flavor Beer and Food Festival was Saturday April 28th The event was at the Main Hall of the Pennsylvania Farm Show Complex. Spencer Mundy was heading up the Chapters Booth at the event. The Chapter Booth was sponsored by Sysco. The event was well attended. There is a recap meeting on June 2oth. Look for more information at the August meeting. The ACF is offering $ grants to chefs participating in the National Chefs Move to School Program. Three granting opportunities are available in Chefs interested in applying must be registered with the NEW Chefs Move to Schools website, be matched with a school and have volunteered twice within a year. The website is NEXT MEETING September 17, 2012 Hacc/Wildwood CC One Hacc Drive Harrisburg, Pa Dave Gurdus and Ed Byrem both received the $ grant from the ACF. Grants are still available. Visit the website. The Williams-Sonoma for Professional Chefs program provides members with exclusive trade pricing, services and benefits, including a 20% discount at Williams-Sonoma when shopping online or at our retail stores. Please complete the online application and fax in at least two forms of professional identification. The National Convention happened on July in Orlando Florida at the Orlando World Center Marriott Resort. The Northeast Regional Conference in 2013 is in Barona, New York on March 18, 19 and 20. The host is the Syracuse Chapter. It is possible that the Northeast Regional Conference is returning to Hershey/Harrisburg in 2014 or Brian Peffley mentioned that there will be joint meetings with the PRA in June, July and August. The Allenberry Playhouse is looking for an Executive Chef. The Beverly Hills Restaurant in the Reading Area is looking for an Executive Chef. Tim MaGrath of Cumberland Perry Votech had a site visit that went very well to become ACF Certified. The Chairman of the Board is going to coordinate and organize a Past Presidents Support Group. YTI in Lancaster is now hosting the written exams for certification. There are now scholarships being offered to those that qualify for certification. Meeting Hosts Needed! We are starting to book dates for 2013 calendar year. If you are able to host a meeting please contact a chapter officer. October 27th Delaware is having an education forum.
