COURSE DESCRIPTION: This course covers the principles of design and layout as applied to foodservice operations. It critically evaluates the over-all atmosphere and utilization of space, facilities and equipment in food establishments. It acquaints the students with institutional foodservice equipment, its specifications, uses and their practical placements in varied kitchen layouts. This integrative course requires students to come up with a feasibility study for a foodservice facility. Planning is stressed with emphasis in efficient flow of production, service and marketability. The effective management must consider both the concept and the business aspect of the foodservice operations such as menu, service, marketing, financial and human resources management. COURSE LEARNING OUTCOME (CLO s) Upon completion of the course students will be able to: CLO1 Examine the past in order to correct the historical errors to prevent the commission of the same mistakes. CLO2 Recognize their own identity as Filipinos by using the nationalist perspective. CLO3 Analyze the essential requisites of politics and the structure which characterized the Philippine political system. CLO4 Claim ownership of their rights and obligations by being responsible citizens of the republic. CLO5 Describe and differentiate the basic purposes and functions of government e.g. executive, legislative and the judiciary.
