1 Montserrat Global Society Cluster Spring 2014 Cluster Description Globalization the increasingly frequent encounter and mingling of ideas, manners, and institutions demands that we educate ourselves to be citizens of the world, that is, to be cosmopolitan. Globalization indeed affects each and every aspect of academic and living prospects: the funding and structure of research in fundamental physics, in chemistry, in the life and earth sciences; the advancements in botany and biotechnology; the savviest economic, legal, and political strategies; the evolvement of religious and philosophical creeds; visions of the self, the family, and societies. Each course within the Global Society cluster peruses fundamental questions related to globalization from a specific angle. This year s offering spans across an exciting variety of places, periods, and subjects: comparative visions of Viet Nam and the Islamic Middle East; travel in art history, visual arts, literature, film, and historical travelogues; the encounter with The Other; representations of plague and social changes in Medieval and Modern Italian literature; the recent ecological changes in food consumption; the development of cryptology and privacy in the Internet age. Cluster-wide activities will promote reflection on selected overarching themes that reinforce an education to cosmopolitanism. 2 2 I AM, THEREFORE I EAT a Montserrat seminar from the Global Society cluster with Prof. Andrea Borghini SPRING 2014: I ESTEEM, THEREFORE I EAT MONT-104G-01/02 Class Number 4162/ A Stein Hall T-Th 12:30-1:45pm/2-3:15pm Andrea Borghini aborghin@holycross.edu url: Year-long Course Objective Create a group of young adults who are well-educated around food and, collectively, possess skills and expertise covering the major aspects of food-talk. Course Description The recipe for creating pleasure through food is complex. Start with the palate. Americans hold food experts in high esteem; Italians do not. Are some experts more right than others? Is the quality of a food objective or is it simply a matter of personal taste? Add a dash of art. Some chefs aspire impressing their table guests. But can food be art? Could a cook ever compare to Michelangelo or Leonardo? Stir food's effect on the body into the mix. Most food labels display nutritional facts." We use them to seek the mental pleasure of a healthy diet. But how should we interpret these facts? Is nutrition a science like say cell biology? Course Requirements and Grade Breakdown Readings and Class Participation (20%): This is a highly interactive seminar and it is especially intended that you attend each class. The only grounds for which absences will be excused are religious holidays, family crises, illness, or athletic competitions (which does not include athletic training). If you must miss class, it is expected that you personally provide me with an explanatory note; also, an absence due to the last three reasons must be accompanied by a note from a dean or a doctor. Finally, if you have scheduling conflicts, please come see me. As for participation, it is based on two aspects: (i) your attendance and well-informed contribution to class discussion, including your research project presentation; (ii) during the semester, you will have several opportunities to play a role in out-of-class activities: I ask that each student attends at least five of them; if you will attend more than five, that will provide you with some extra participation credit. Class activities do not include cluster events and trips, but include cultural events that are related to the course, such as movies, field trips, out-of-class lectures, cooking occasions, and concerts. Essay Project (50%: 5% pitches for research topic; 5% office meeting; 10% bibliography; 10% draft; 20% final): see separate document. In-Class Exams (20% 10% each): the exams will test your familiarity with the readings and issues discussed throughout the semester.

3 Cooking Classes (10%): Holy Cross nutritionist Kathy Egan and Paul Bartkus (Kimball Kitchen Manager) will hold four cooking classes. You will have to attend at least one class. Late papers incur in a penalty of one third of a letter grade per day (e.g. from A to A-).
