Page 4 The Buzz About Bees Rick Fink President Alamo Area Association of Beekeepers On Saturday, November 18 th, Beta Tau members met, once again, at the William R. Sinkin Eco Center. Rick Fink, president of the Alamo Area Association of Beekeepers, gave an interesting presentation on The Importance of Bees. Afterwards, golden sweet honey from Bandera was available for purchase. Dr. Debby Valdez and Ann Morales visit before the business meeting Rick Fink gathers up jars of honey for Cynthia Kosub and Lola Hill The winter edition of the Lone Star News contains information on the 2018 TSO Convention in Waco, Texas. The traditional events at the convention will have a twist. For example, the Founders Day Banquet will be a Denim and Diamonds affair, minus the formal attire and heavy on the BLING! Texas State Organization President, Jo Murphy, addresses the hardships and challenges faced by many of our TSO members this fall. She reminds everyone that we are TEXAS STRONG! Page 5 Recipe For A Healthy Lifestyle SPINACH, BACON, & GRUYERE BREAKFAST STRATA Ingredients 4 center-cut bacon slices 1 ½ c. chopped yellow onion 4 garlic cloves, thinly sliced 6 oz fresh spinach, chopped 6 oz crusty whole-grain bread cut into 1 in. cubes ¾ c. Gruyere cheese shredded ¾ c. 1% low-fat milk ¾ c. plain 2% reduced-fat Greek yogurt 4 large eggs 2 large egg whites 1 T. Dijon mustard ½ t. freshly ground black pepper ¼ t. kosher salt Cook bacon until crisp. Transfer bacon to a paper towel lined plate, reserving 1 ½ T. of the bacon drippings. Add onion and garlic to drippings in pan; cook, stirring occasionally, until onion is browned and tender, about 10 minutes. Add spinach; cook until spinach wilts, about 2 minutes, stirring constantly. Toss together chopped bacon, onion mixture, bread cubes, and cheese in a large bowl. Arrange mixture evenly in an 8-inch square glass or ceramic baking dish coated with cooking spray. Combine milk, yogurt, eggs, egg whites, mustard, pepper, and salt in a large bowl; stir with a whisk until well combined. Pour evenly over bread mixture. Cover and chill 8 hours or overnight. Preheat oven to 350. Uncover baking dish, let strata stand at room temperature as oven preheats. Bake strata until top of strata is browned and a knife inserted in the center comes out clean, about 1 hour. Let strata stand for 5 minutes before serving.
